Chicken & Vegetable Stir Fry

Serves 2-3 (double ingredients for 4-5)

1 Chicken Breast-cut into 1/2 inch pieces
1/2 of a yellow onion-thinly sliced
1 green pepper-thinly sliced
1-carrot-peeled and thinly sliced
1 broccoli crown-cut and steamed
2 green onion- chopped
1/2 teaspoon minced garlic
1 1/2 tablespoon of oil(your choice)
2 tablespoon of soy sauce
1/2 cup of chicken broth
1/2 cup of corn starch/ 1/4 water (mix together)
Using a wok or saucepan add oil and chicken. Cook on high until 90%done. Then add all vegetables and garlic and cook for another 30 seconds. Then add soy sauce and broth and bring to a boil. Once boiling add corn starch mixture gradually until desired thickness. Remove from heat and serve with steamed rice
Tip: can substitute low sodium or gluten free soy sauce for restricted diets
Tip: adding crushed red peppers or sriracha before corn starch mixture will give it a spicy kick!
