KSPR in the Kitchen serves up Orange Ginger Chicken



4-6 boneless chicken breast
Olive oil
Salt & pepper

Preheat oven to 375 degrees, pound breasts if needed to insure consistent thickness throught. Lighly coat the bottom of a baking dish with oil. Place chicken breast in baking dish and season with salt and pepper. Cover with foil and bake for 15 minutes, remove foil and bake another five minutes. Check internal temperature. 165 degrees is the goal. You can also grill your chicken breasts for this recipe (my favorite way). Remove pan from oven, let the chicken rest for 5 minutes and then place on a serving platter and top with salsa. Serve


¾ cup fresh orange (peeled, seeds removed, diced ¼”)
¾ cup roma tomatoes (seeds removed, ¼” dice)
1 ½ teaspoon fresh ginger, finely diced
2 tablespoons white onion, 1/4“dice
1 ½ teaspoon lime juice
1 ½ teaspoon olive oil
1 ½ teaspoon fresh cilantro chopped
¼ teaspoon salt
½ teaspoon sugar
1 tablespoon sweet Thai chili sauce

Combine all ingredients and chill

When ready to use, bring to room temperature and use to top any grilled or baked chicken, fish, pork or shrimp.
