KSPR in the Kitchen prepares Tilapia Bella Vista

SPRINGFIELD, Mo. Tilapia Bella Vista

Approx. 4 servings


4-6 Tilapia filets
2 oz. dry white wine (can substitute vegetable stock, water or milk)
2 Tbsp. butter, cut into pieces
1 Medium ripe tomato, sliced
1/2 large green pepper, cored and sliced into rings
1/2 medium sweet onion, peeled and sliced into rings
2 Tbsp. chopped fresh parsley (can substitute cilantro, fresh oregano or basil)
1 tsp chopped garlic
Salt & Pepper

Preheat oven to 350 degrees. Fold Tilapia filets in half (skin side inward) and arrange in baking dish. Add wine. Distribute the butter evenly between filets. Do the same with the garlic. Season with salt and pepper. Place a tomato slice on top of each filet, then a few onion rings and a green pepper ring. Sprinkle with parsley. Cover the pan with foil and bake for 20 minutes, remove foil and bake another 5 minutes. Fish is done when the thickest part is white and flakey.
