Baby Beet & Mushroom Bites

Skewer one baby beet and one small marinated mushroom. Sprinkle with chopped parsley.

Herbed Baby Beets, Artichoke & Pepper

Skewer one baby beet, one piece of marinated artichoke heart and one piece of bell pepper. Sprinkle with chopped herbs.

Cheese & Nut Baby Beet Duo

Skewer one baby beet. Spread another beet with soft spreadable cheese and roll in chopped nuts (almonds, pecans or walnuts); insert onto skewer.

Asian Shrimp & Baby Beet Skewers

Skewer one cooked shrimp, one baby beet and a chunk of fresh mango. Brush with prepared sesame-ginger vinaigrette; sprinkle with chopped cilantro.

Antipasto with Baby Beets

Combine beets (drained), chopped fresh basil and rosemary, cannellini beans and bite-size pieces of salami; season with coarse ground black pepper.

Classic Baby Beet & Walnut Salad

Arrange mixed greens on platter. Top with baby beets (drained), crumbled blue or goat cheese and plain or candied walnuts. Drizzle with vinaigrette.

Wild Rice & Baby Beet Salad

Combine cooked wild rice (or packaged wild rice mix), coarsely chopped Granny Smith apple, sliced green onions, coarsely chopped cooked chicken (from rotisserie, or packaged, pre-cooked strips) and baby beets (drained). Toss with red wine or balsamic vinaigrette.
