Beet Salad
Ingredients:
Mixed greens
Roasted beets
Crumbled Midwestern goat cheese
Candied pecans
Orange segments
Balsamic syrup
Orange basil vinaigrette
Directions: Take bowl and add two cups of mixed greens. Toss mixed greens in orange basil vinaigrette. Pour mixed greens on a plate. Add crumbled goat cheese, candied pecans, orange segments and sliced roasted beets on mixed greens. Drizzle balsamic syrup over entire salad and serve.
To Roast Beets:
Roll raw beets (one red, one yellow) in oil. Put beets in pan and salt and pepper liberally. Cover pan with aluminum foil. Roast in oven until fork-tender at 350F for 45-60 minutes. Cool down beets, cut ends and peel skin off of beets. Slice beets.
Candied Pecans
Ingredients:
1/3 egg white
3 Tbs powdered sugar
pinch of cayenne
pinch of nutmeg
5 oz pecans
Directions:
Combine all in small bowl. Lay nuts out on sheet pan. Bake at 325F until golden brown.
Orange Basil Vinaigrette
Ingredients:
2 cups orange juice
1/4 cup honey
1 bunch basil
1 cup red wine vinegar
salt and pepper, to taste
1 cup vegetable oil
1/2 cup Dijon Mustard
Directions:
Add everything except the oil into the bowl. Whisk for a few minutes. Add oil slowly until emulsified.
