"I tried to make it not like gin," says Nick Carbone of his namesake spirit. "It is softer, less pine tree forest and lighter in style."
Fat Dog Spirits began with a vodka called Touch, distilled from Florida honey. But as Carbone began experimenting with flavored vodkas using natural citrus and locally grown botanicals, artisanal gin was the next evolution.
"I can truly say I have not tasted another gin like it and people who say they don't like gin find themselves very surprised and pleased by the taste," says Carbone.
When he started the distillery in 2004, the idea of local spirits was an anomaly. An unfortunate part of the industry, is that small batch products can often be on back order, as is the case with Nicholas Gin in some areas now.
