TASTE of the Ozarks: Red Velvet Truffles

Recipe makes 10 to 20 truffles

Ingredients:
1 Small iced red velvet cake
1 cup white chocolate chips
1 teaspoon vegetable oil
Valentine's Day sprinkles

Put the iced cake into a bowl and using a spoon, mash the cake and icing and mix together until completely combined. Scoop out golf ball-sized amounts of cake. Roll in your hands and place on a lined sheet tray. Freeze for 15 minutes. Put the white chocolate chips and vegetable oil in a microwave safe bowl. Microwave on high for 30 seconds. Stir and repeat until the white chocolate is smooth. Remove truffle balls from the freezer. Use a fork dip the cake balls in the melted white chocolate. Place the truffles on a lined sheet tray and immediately garnish with Valentine's Day sprinkles. Store in the refrigerator or freeze. Allow time for the truffles to reach room temperature before serving.
